I found a nut free ebook online a couple of months ago but I had not got round to making anything out of it.
Last week I had a strong craving for chocolate and caramel, however the amount of chocolate I had already consumed made me double think it, until I remembered the book.
I am in LOVE. Not only does it taste AMAZING but it has no added sugar and it only takes a small slice to cure any sweet craving.
I have cut back on the coconut oil in the recipe as the mixture is too wet otherwise. So if you find it needs more liquid just put extra melted coconut oil in small amounts into the food processor while mixing ingredients.
This is the first time I have baked with Tahini, it is a great binder and packed with vitamins and minerals and is a great source of calcium too! I use Chantal organic tahini as it is 100% ground sesame seeds and has no added nasties!
Bottom Layer
8Tbsp Tahini
1/2 cup chopped Dates - pitted
2Tbsp Mesquite Powder
1 cup GF Oats
1/2 cup Water
Line a slice tin, I use 8x8, with baking paper.
Place everything in the food processor and blend well.
Spread mix evenly over paper.
Place in freezer for 15mins.
Place in freezer for 15mins.
Middle Layer
1/2 cup Lite-Coconut Milk
1/4 cup Coconut Oil, melted
1 1/2 - 2 cups Dates, softened
1tsp caramel essence, or vanilla
Soak date in boiling water for approximately 10min to softened, but make sure they don't turn soggy.
Place all ingredients in the food processor and blend until smooth.
Spread over bottom layer.
Place in freezer for another 15mins.
Top (Chocolate) Layer
1/4 cup Cacao butter, melted
1/4 cup Dates, or around 6 Dates
3/4 -1 cup of Cacao Powder
Place all ingredients in the food processor.
Mix until smooth.
Spread on to caramel layer.
Allow to set at room temp (1/2 hour) before cutting.
More liquid may be needed so just add small amounts of water or melted coconut oil to blender.
Keep refrigerated! :)
