Waffles

Gluten Free

3 eggs - Separated
3 tsp baking powder
5 Tbsp melted coconut butter
1 Tbsp coconut sugar
2 cups buckwheat flour
1 1/2 cups milk (approximately)

Wholemeal 
Same as above however substitute buckwheat flour for wholemeal flour.

Mix together all the ingredients except egg whites.
Mixture is meant to be runny.
Beat the eggs whites until stiff.
So they do not fall off the beater.
Fold in beaten egg whites to other combined ingredients.

I have a 'belgium' like waffle maker which makes two large waffles at a time.
In each compartment I put 3-4 Tbsp's of mixture in.


 You can also add chocolate chips, vanilla essence, or anything for that matter in the mixture.

My favorite toppings are definitely banana and liquid honey and the cheeky time a bit of bacon.
The world is your oyster when it comes to topping though. You can have berries, jams, yoghurt, fruit etc...
