Delicious Healthy Brownie - GF - and a mess

I think I am obsessed with brownie...
I have made at least 10 different recipes online and from scratch in the past couple of months trying to find that perfect recipe thats rich and thick... Unfortunately I have not quite mastered it.
 However through countless trials and errors I stumbled across this.
It isn't chewy or extra gooey. It isn't cakey either so I am not 100% sure how to describe it, you will just have to make it to decide for yourself ;)

Notes
• I use 70% + Dark Chocolate.
• The mixture will seem very thick but I just spread it into the the tin with my hands - much easier and you can enjoy the mixture off your hands. 

Ingredients

Dry
1/2 Cup Cocoa              
3/4 Cup Coconut Sugar
1/2 Cup Corn Flour
1/2 -> 1 Cup Coconut Flour
1 tsp Baking Powder

Wet
1 Cup -> 2 Cups Chocolate, melted
100 -> 150g Butter, melted  
1 tsp Vanilla Essence
1 egg

Optional
Extra solid chocolate chips or chunks
1 tsp coffee
Oven - 180ÂșC
  1. Melt chocolate + butter in the microwave in 30 second intervals until thick and combined, stir after each 30 seconds. It usually takes a max of 1min 30sec. While doing this mix together all the dry ingredients in a separate bowl.
  2. Add sugar and vanilla essence, (tsp coffee), and egg. Whisk together until just combined.
  3. Add all the dry ingredients to the wet mixture. 
  4. Finally stir in the optional chocolate buttons or chips.
  5. Pour mix into 8x8 dish and cook for 25-30 minutes.
P.s. It takes great reheated a couple of days later with greek yoghurt!

Another brownie recipe... gone wrong...
If you ever happen to overdoes on the dry ingredients and don't want to throw out your hard work 'cos it still tastes nice then stop! 
I really love trifle and I add a few too many 1/2 cups of cocoa and cornflour to my mix. I still really enjoyed the taste and didn't want to let it go to waste (unintentional rhyme). So... I crushed up half the brownie, as it was already very crumbly, heated 2 bowls of mix frozen berries and made some custard ( 3-4 Tbsp Custard Powder and approx. 2 Cups of milk)
