Crêpes

Almost every weekend when I was younger, my brother and I would bound out of bed (at 11am) and kindly ask mum to make us crêpes, pancakes, or waffles those delicious weekend treats. Although the taste is exquisite the white flour, lashings of butter and sugar was not every good for us.

Whenever I had friends over in the weekend we would make these delicious goodies. Maple syrup, banana, bacon, berries, chocolate sauce, whipped cream you name it we had it.

But when your young you don't think about the fats and sugars you are putting into your body because well they were what tasted so good.

Now that i'm more aware of the damage some of these 'yummy' foods can do to our body's I try and avoid the fake sugars and high fat food. But this doesn't mean I have to stop enjoying the sweet taste of a childhood fav.

These taste just as good as what I use to have without all the nasties.

Instead of smothering grocery brought, high sugar jams heat some frozen berries instead.
Also, many maple syrup are 'maple flavoured' syrups. The pure maple syrups are quite pricey in some places but liquid honey is just as nice and cheaper too! Stevia can also be used.

If you can't skip the bacon, purchase a lower fat one, not streaky and this has next to no bacon on it. When cooking it you only need to grease the pan with oil. Coconut is a good, healthy oil to use.

Ingredients

3/4 cups flour (buckwheat works really well and tastes great as a GF flour) if you want to use 'normal flour' opt for the healthy option of whole wheat.
1/2 tsp baking powder
1 cup milk - low fat/ fat free
2 eggs
1 tsp vanilla extract
1 Tbsp melted coconut oil or coconut butter + extra for pan

2 Tbsp coconut sugar (optional)
