Not many people like dates, as I have discovered. But for those of you who do... You will love these.
This recipe is a spin off from the ones in the Kristin Cookbook.
I love dates, and oranges so these were something I had to try, once I did, it was love at first bite.
As I was adding the milk at the end I realised I didn't put any margarine in! So I bit my tongue and just continued making them without it to see how it turned out and this was the outcome...
Ingredients
- 1 cup pitted dates, chopped
- 1 Tbsp orange rind
- Juice of 1 orange
- 2 1/2 cups buckwheat flour
- 1/2 cup of coconut flour/quinoa flour/ or if you are not gluten intolerant just use 3 cups of whole wheat flour
- 6 tsp baking powder
- Sprinkle of cinnamon
- 2 Tbsp maple syrup
- Approximately 3/4 cups dairy free milk
Directions
- Preheat oven to 220ยบ C
- Line baking tray with baking paper.
- Chop up the dates and place in a medium size bowl.
- Grate orange rind into the bowl, then squeeze all the orange juice into the same bowl.
- Add all the other ingredients into the bowl with the dates, orange juice and rind and mix well.
- Slowly and gradually add the milk to the mix until it forms a doughy texture (not too stiff, but not cake mix runny).
- Place dough onto parchment paper and spread out evenly. Cut into squares.
- Bake in the oven for 10-12 minutes. Until golden. Transfer to cooling rack.
