Chocolate and Cranberry Oat Biscuits

Oat Biscuits

These were one of my first 'healthy' recipes I tried and after that I never looked back.

This is my first time making a blog and posting. Over the last 2 years I have become almost obsessed with baking and cooking, it is one of my favorite things to do, very relaxing! These were one of my first recipes I created and still have them very often. I have a passion for healthy foods because I believe our bodies need to be treated well. I hope you enjoy :)

I love these biscuits because they are quick and easy and taste great too. They are very versatile, I usually use 72% dark chocolate pieces and cranberries but you can use any kind of fruit, dates, raisins etc...
They are a perfect snack food with a hot drink or if you are in a hurry. I have found that they keep for up to 2 weeks before they start to go off (mine don't usually last that long before iv eaten them!). 

Ingredients 

1 1/2 Cups  Whole Wheat Flour
1 1/2 tspns  Baking Powder 
1 tspn of Baking Soda
1/2  Cup  Margarine
3 Tblspns  Coconut Oil
1/2 Cup  Coconut Sugar (Brown Sugar works well too)
2 Eggs
1 tspn  Vanilla Extract
2 1/2 Cups  Rolled Oats
1 1/2 Cups  Raisins (or any dried fruit you like, dates, cranberries etc.)
1 Cup  Dark Chocolate Chips (I use cut up 72% chocolate works just as well)

Directions 

1.) Preheat oven to 190 degrees Celsius (375 F)
With an electric mixer cream melted coconut oil, margarine and sugar until light and fluffy.
Add in eggs and vanilla: beat until combined.

2.)In the same bowl add in all the dry ingredients: flour, baking powder, and baking soda.
Mix until well combined.

3.) Stir in: oats, dried fruit, and chocolate.

4.) Roll mixture into balls and place on to the baking paper. 
Should make around 32 biscuits (depending on the size you prefer)
Bake in the oven for 10-12 Minutes, when golden brown and soft to touch.
Remove from oven and allow to cool for 5 Minutes on baking tray.
Transfer to wire rack to cool.
